The beginning of the history The Royal delicacies of eclairs is not without reason. History says, like Catherine the Medici, Queen of France and one of the most influential historians of the XVI century, after marrying and moving to France brought her own cooks with her. The art critic and philanthropist also loved the gourmet cuisine. It is her court chef Pandergly invented a dough, from which for several hundred years the eclairs have been prepared. Perhaps the royal chefs passed their secrets from generation to generation, but the second wave of the popularity of eclairs falls in the XVIII century. It is associated with the name of Marie-Antoine Karema – the chef of the French royal family, the “cook of the kings and the king of the cooks,” who cooked desserts for the emperor Alexander I, King George IV, Rothschild and Talleyrand.

The star time Оf the nineteenth century is the time of the lightning march of the Eclairs of Europe. Moreover, the “lightning” in all senses: “eclair” in translation from the French “lightning”. The opportunity to find out about the recipe for royal pastries was received by the hostess after the first mention of the Eclair Recipe in 1884 in the cookbook Boston Cooking School Cook Book, written by Fanny Farmer. The publishers of Little, Brown & Company were not at all convinced that the book would be well sold. Therefore, the first edition came out in 1896 with a limited circulation of 3,000 copies at the expense of the author, but dispersed extremely fast. The book became a hit, many times republished and, like its author, deserves a separate story. The main thing is that it simply and clearly told about the preparation of classical eclairs, which now could be treated not only grandees.

Love in records Nowadays, love for eclairs is growing, like the eclairs themselves. Officially, the record high is the 503-meter-long cake made in Switzerland. But in 2016, the confectioners of the Belgian town of Verviers beat the record. They produced a chocolate eclair 676, 6 meters long, having spent 1500 euros on cooking. The money was provided by sponsors, but not for fun: the giant eclair was cut into 6,000 pieces and sold, and money was raised for charity. In 2017, Ukraine has only registered an official increase in the production of eclairs, but who knows, maybe we will once again try to record.
