Gastronomic travel around Zhytomyr “Buba KHINKALNA”

Guess culinary riddle: dish must firstly be drunk, then eaten, but not completely eaten up? Famous Georgian khinkali! The large size of a fist, tight curly bags of dough with juicy spicy meat filling is a masterpiece of Caucasian cuisine. They are the business card of the restaurant, which today represents gastro expert Svitlana Seiko.
“Buba” is a common word in Georgia. In the northwest of the country, in Svaneti there is a mountain Buba, and even so-called honorable family member.
Location: cafe is located in the center of Zhytomyr, opposite the cinema “Ukraine”, known to every citizen. You can park your car directly across the cafe. In a city transport and travel is convenient -bus stop is near here.
The interior is simple and spiritual, like everything else in Georgia. The point of collecting all in “Buba” was opened to view a kitchen with a large round “tandoor”. It bakes bread, Georgian khachapuri and Puri.
Near here there is an outdoor grill where there are fried kebabs, kebabs, kupaty (traditional Georgian sausages) and fish. For those who are in the “Buba” firstly, waiters carry briefing how to properly eat, just hands and holding the tail at first bite and drink the broth, and then eat everything except the tail.
Today I’m taking a healthy diet, trying to find a menu something more or less suitable for a so ordered the warm salad with chicken (similar to “Caesar”, only with chicken kebabs), pumpkin soup nut (sweet taste of pumpkin and chickpeas successfully complement each other) and khachapuri in Adjara with cheese and quail egg.
To green tea with thyme they gave us a compliment from the cheff – sand nuts with condensed milk.
I also like how the fish is prepared – as an option for those on a healthy diet. They say there is a tasty homemade wine and chacha. For those who do not consume alcohol, there is always a delicious “day compote” or lemonade of own production with cilantro or basil, preparing just in front of guests.
Service: the friendly young staff with time well remembers preferences of regular guests. They prepare food here quickly. Also “Buba” can offer coffee or tea directly with threshold – a welcoming room at the bar in front of the stove. You can just place an order and wait, when it will submit at the table already.
And I, as owner of the beauty studio, always liked that smile of waitresses in “Buba” with red lipstick. Today, they probably decided a little break from this tradition, I hope not for long.
Pricing policy for this level of service is very pleasant. As owners of the institution positioning, it should be comfortable and entrepreneur, and affordable for a student. Today, for the dinner I paid 181 UAH.
That’s interesting. From time to time, “Buba” invites children to a workshop on modeling khinkali, or khachapuri and chebureks. Participation is free but registration is required. It also makes home delivery meals.
