GASTRONOMIC TRAVEL AROUND ZHYTOMYR: IN “KORCHMA” WITH SVITLANA SEIKO

Someone will say that traditional Ukrainian cuisine cannot change in principle, but we will say what it can. And we invite you to make sure of this in the updated Zhytomyr restaurant “Korchma”. How it differs from other establishments with Ukrainian cuisine, and why it should be visited not only to the guests of the city, but also to the Zhytomyr people, today our gastro expert Svetlana Seiko will tell us.
Atmosphere and color “Korchma” are combined with modernity.
Location The facility is located almost in the city center. If you ride from Kiev to your own car, take the straight line to Victory Square (so you do not wander around bypassing). You will need to move in the direction of the Cathedral, past the central entrance, and at the first intersection immediately turn right. Drive along the tram tracks until you see the Ukrainian side with a straw on the right side. The restaurant is located at the crossroads of the Mykhailo Hryshevskyi street and Nebesnoi Sotni, and on its territory is its own large parking lot.
Interior: In Korchma, after a recent renovation, the classic Ukrainian style and the modern attribute were combined: white walls, tables and buffets were complemented by carved wood columns, modern lamps, carpets, paintings and a small garden with gazebos in the shade of trees.
Usual for all “Ukrainian” red was replaced by violet, and girls-waitresses were dressed from embroidery in elegant lilac skirts. In the summer on the street in the “Korchma” is very atmospheric and cozy, the impression that you sit in a garden from your grandmother and dine home-cooked. Such a vacation in nature, without leaving the city.
Cuisine: If European reforms came to Ukrainian cuisine, then this would be a menu for the Zhytomyr restaurant “Korchma” (I’m kidding, of course). Although significant changes in the recipes of dishes were not experienced here, however, their submission and servicing have become modern. For example, calabashes from a farm rabbit were given to us in a large “space” plate decorated with caramel and rosemary (how are you?).
This is one of the masterpieces of the author’s cuisine of Chef of the institution Tatiana Ukrainets. Many dishes here are cooked on an open fire. Generally in the menu, a lot of “modern” interesting as for Ukrainian cuisine, for example, tiger shrimp in garlic sauce.
By the way, portions here are still closer to European formats than to Ukrainian ones. We are all used to it: Ukrainian cuisine is generous, and food in plates is a lot. In the “Korchma” to this question came up to the present: everything is modest, precisely, verified to gram. So if a man dined with us today, he would add some more massive to the portions of borsch or cabbage rolls.
From drinks we tried uzvar. For those who want to try something stronger, the good news: “Korchma” in every way supports the Ukrainian manufacturer and offers a good selection of wines “Household of Prince Trubetskyi”, family winery “Kurin” and known many brands “Shabo”.
As usual, here they make their own liqueurs and tinctures from the restaurant: on prunes, with light peppers, a tart with honey and herbs. You can also try homemade pickles here.
Service Our current visit to Korchma coincided with time with a feast, so at first we almost did not get from the waiters of the pumpkin, but the guests are always happy here, and we all dined in one of the free pavilions in the courtyard. At the feast days it is difficult to serve quickly; however, it is still delicious. Most of the guests of the “Korchma” are regular clients who celebrate weddings, families, christenings, birthdays, and more on the list.
Interesting things: Every weekend from 15 to 18 hours “Korchma” arranges entertainments for adults and children: conducts art therapy in the open air, frequent unusual delights, presents games with animators and show programs.
