New Year is associated with a festive table, the must have of which is Olivier’s Salad. No one is even trying to recreate the original recipe today, and every housewife has a «secret code» of this favorite dish. However, over the years, Olivier has not lost its culinary popularity and heads the TOP New Year’s salads. We decided to publish our own collection of favorites by adding recipes and cooking tips. «Olivier»
In the days of the New Year holidays, we were in the habit of making Olivier sausage and mayonnaise, but our version is much tastier and more useful. Ingredients: potatoes – 4-5 pcs., Carrots – 2-3 pcs., Canned or fresh peas – 1 jar, chicken fillet – 300-400 g, salted or pickled cucumbers – 4-5 pcs., Eggs – 6 pcs. , onion – 1 amount, greens, sour cream and mustard.
How do we cook? To start potatoes and carrots are cooked «in uniforms». You can immediately boil eggs. Cook the chicken, slightly salting the water. Cut the cucumbers, ready vegetables and eggs into cubes, finely chop the onion. Boiled chicken can be cut into cubes, and can be divided by fork boiled meat. We mix the ingredients and add the peas. For dressing prepare the sauce, mixing sour cream and mustard. Add salt to taste and decorate with greenery.
«Crab Salad»
The secret of this salad is quality crab sticks. This easy-to-cook dish is quickly gaining popularity, but since there are no crabs in the crab, choose the tried and tested crab sticks to avoid spoiling the salad taste. But to make it even more delicious you can add shrimp. Ingredients: crab sticks – 6 pcs., Shrimps – 15-20 p., Fresh cucumbers – 3 pcs., Eggs 6 pcs., Onion – 1 pc., Boiled rice – 1 cup, canned corn – 1 jar, sour cream and mustard, salt to taste.
How do we cook? Dice the crab sticks, cucumber and onion. Boil rice, eggs and shrimp. Just in case we specify that it is not cooked in one dish – mix everything afterwards. Cooked shrimps and eggs are also small and added to the plate. Finally, combine the rice, corn and add sour cream and mustard sauce. You can add some salt, and you can do without it – taste at your own discretion.
«Tuna Salad»
A delicious, light and very useful tuna salad will make your Christmas table refined and healthy. In addition, it takes very little time to prepare, which is an added bonus when living in a crazy rhythm. Ingredients: canned tuna – 1 jar, lettuce – 5-6 pieces (or 1 small cabbage), combined greens (parsley, dill, cilantro) – 6-8 branches, fresh cucumber – 1 amount, canned corn – 4-5 tbsp. For the sauce: olive oil – 3 tbsp., lemon juice – 2 tbsp., mustard – 1 tbsp., salt, pepper.
How do we cook? Cut the boiled eggs in advance, dice the cucumber, put the tuna on the salad plate and add the corn. There we put the lettuce leaves (it is better to break them with your hands) or cut the Beijing cabbage. Mix the ingredients for the sauce and season the salad. A little more green in addition, mix thoroughly and done.
«Dressed herring»
Where to go without our favourite «dressed herring»? Flavor with herring and beetroot is also a time-tested «parent» classic. We will make this salad in a lightweight version – without mayonnaise. Ingredients: potatoes – 3, herring fillets – 1, beets – 1, carrots – 1, onions – 1, eggs – 2. Sauce: sour cream, greens, garlic, salt.
How do we cook? To begin with, boil eggs, potatoes, carrots and beets. Herring fillets are diced, also chopped onions. Cooked vegetables on a grater, cut the eggs finely. Prepare the sauce: grind (squeeze) 2 cloves of garlic, cut the greens to taste, mix the sour cream, salt and pepper. The first layer:we will spread the mashed potatoes, greasing the sauce. Next, spread the herring and add the sauce on top. Put the onion, eggs, carrots on the herring, coat each layer with sauce. On top – grated beets. You can decorate the salad with a little grated egg white or sprigs of greens.
«Bride or Cheese Salad»
Delicate, tasty and salad will appeal to salad fans. The ingredients are simple, but when combined, there is a never-ending mix. Ingredients: chicken fillet 1-2 wt., Eggs – 4 wt., Melted cheese – 2 pcs., Potato – 3 pcs., Onion – 1 wt., Apple cider vinegar – 2-3 tbsp., French mustard – 2-3 centuries., sour cream – 5 tbsp.
How do we cook? We first boil the chicken fillet in salted water and cook the potatoes and eggs separately. Grind the onion for a few minutes in the apple cider vinegar. Finely chop the boiled chicken, eggs, grate the potatoes and melted cheese. Mix 3 tbsp. French mustard and sour cream. The salad will be laid in layers: first cut chicken fillet, then marinated onion, top – grated potatoes. Add some salt and grease the sauce. Next, lay out the egg yolks, and the final layer is melted cheese, with which we «wrap» our salad on top and sides.
Our recipes are simple, do not require special skills and will be suitable even for beginners.
